GF Crepe

Yessss, it's possible. And there are yummy too!

Here's a very precise recipe (sometimes this will happen ;0)

1 cup BROWN RICE flour (= 160 gr.)
1 tbsp TAPIOCA flour (helps holding it together!)
More or less 1 + 1/2 cup milk (works very well with non-dairy milks... almond, rice, soy)
2 eggs
a dash of salt
1 tbsp of olive oil

MIX... the 2 flours + salt
ADD.. the milk to obtain a thick mixture.
ADD... the eggs & oil and maybe more milk.

Note: you want a "not too thick" nor "not too liquidy" of a mixture)

LET... your batter sit for 15 min. before cooking away!

The 1st crêpe is usually the “sacrificial” one.
It gives gives you a sense of your frying pan & the thickness of your batter.

The trick here is to make smaller crêpes.

I know... not everyone has a Vitamix...

Well, maybe it's time to treat yourself to one!

I don't have many fancy gizmos in my kitchen.
A Vitamix and a Cuisinart 9-cup Food Processor.
I definitely go a long ways with these 2.

See, making flour is that easy. And it's so fresh. The ones you buy at the store have lost so many nutrients along the way. As soon as you grind something, it alterates its qualities.

Halva2

The sweet notes at the end of our dinner...

Friends came over and Wendy brought these chocolate treats.

There are made with dried apricots, cacao powder, shredded coconut etc.

She's a "winger" as well so she couldn't give me a precise recipe. Reminds me of somebody ;0)

I made HALVA for the first time and I'm very happy to say that it turned out awesomely.

Ingredients = Sesame seeds + Medjool dates + coconut oil. That's it!

It took just a few minutes to make and a few more to chill in the fridge.

Who wants the recipe?!
I ask the question b/c I haven't had too many comments on my BLOG yet.
I have hits on it so I know someone is out there reading!

Grated Tofu

What is THAT?!

Well... something I came up with at the last minute the other day for dinner.

I had some FIRM TOFU left in the fridge - once the package is open, I keep it covered in water and change that water everyday. This way, it keeps for a few extra days.

I was HUNGRY so I wasn't about to wait for MisterTofu to marinate away for a few hours.

SOLUTION = GRATING the TOFU just like you would do with a piece of cheese!
That way, whatever seasoning you add, it is almost instantly absorbeb (tofu is like a sponge!). Your tofu is then ready to go in a flash!

As a quick marinade, I used olive oil, tamari, lemon juice, S&P, turmeric, garlic + Provence Herbs. And a few drops of Toasted Sesame Seed Oil.

It sat on the counter while I was getting my shallots and peppers ready.
By the time everything was nicely sautéed, I tossed in the tofu.
Last ingredient = water ;0) It made a bit of a juice when cleaning up the pan where all the good stuff sticks to!

At first, I had in mind to add tomato sauce BUT it didn't need it at all.

We had that mixture on organic spaghettis cooked "Al dente".
I couldn't resist but add nutritional yeast... I'm addicted to it...

 WARNING...

This is a silly post... about a Super Healthy Birthday Cake Alternative!

This "cake" is...
Organic. Vegan. Gluten-Free. Raw. Has a whopping amount of Potassium (which helps with blood pressure & heart functions. Yeah Happy Heart ;0). Cheap. Easy to find. Easy to eat. Easy to carry around in case of a sudden cake craving.

What more to ask for?!
